The History of Neapolitan Pizza
As you may already know, there are many different styles of pizza out there. If you grew up in the United States, you’re probably very familiar with “New York-style pizza” or “Chicago deep-dish pizza.” But what makes neapolitan pizza or pizza napoletana so popular? At the end of the day, it boils down to history and taste.
Neapolitan pizza is one of the most famous Italian food products in the world, and for good reason. A true symbol of Italy, this delicious dish is believed to have been created during the 18th century. This unique pizza embodies the essence of simplicity. With only a few high-quality ingredients, a charred crust, and fresh tomato sauce, these pizza’s are baked in wood-fired ovens at roughly 900°F for 60 to 90 seconds.
Once this tasty pie spread throughout Italy, it was brought to the United States by Italian immigrants in the late 19th century. The original neapolitan pizza recipe consisted of fresh pizza dough, tomatoes, mozzarella, basil, and olive oil. Thankfully, this pizza recipe hasn’t changed over the years, keeping its old traditional alive today.
Official Certification For Authentic Neapolitan Pizza
Here’s a fun fact you may not know: Italy takes their neapolitan pizza making very seriously. So much so, that in 1984, Naples founded The Associazione Verace Pizza Napoletana (VPN) to certify that pizzaries were using the proper ancient artisan traditions of authentic Neapolitan pizza. In order for a pizzeria or restaurant to meet specific criteria, they must meet several different requirements. Some of these requirements include:
- A true, authentic Neapolitan pizza must have a crust made from dough that was created with highly refined Italian wheat flour (either type 0 or 00).
- The dough must be kneaded by hand or with a low-speed mixer. A rolling pin cannot be used.
- The pizza dough should be topped with raw, pureed San Marzano tomatoes from Italy, as well as mozzarella cheese made from cow’s milk.
- All pizzas should be baked for 60 to 90 seconds in a minimum 800°F stone oven with a wood fire.
As you can see, there are many requirements that must go into an authentic Neapolitan pizza.
